Ingredients
1 1/2 Teaspoons Dried Oregano
1/2 Teaspoon Dried Rosemary
2 Limes (Juiced)
1 Tablespoon Sesame Oil
1 Tablespoon Olive Oil (And a little extra to oil the grill grates)
1 Tablespoon Low-Sodium Soy Sauce
1/2 Teaspoon Cumin Powder
1 1/2 Teaspoons Brown Sugar (Agave or Honey also work)
3 Skinless, Boneless Chicken Breasts – Cut into 1 1/2-inch cubes
2 Mangoes – cut into cubes
Salt and Pepper to taste
Directions
- Mix all ingredients except chicken and fruit to make a marinade.
- Add marinade to chicken and refrigerate for at least 2 hours (ideally leave overnight).
- Once chicken has marinated, discard remaining marinade. Use wooden skewers (previously soaked in water) and thread the chicken with the fruit.
- Slightly oil the grill grates. Set grill to medium-high heat.
- Grill kabobs for about 7 minutes per side until chicken turns white and juices run clear.
Notes
- A variety of fruit can be used in this recipe. Papaya and pineapple chunks pair wonderfully with kabobs.
