Habichuelas con Huevo (Honduran-Style Green Beans with Eggs)

Ingredients
1 Pound Fresh Green Beans (washed and cut)
1/2 Cup Onion – Finely Diced
2 Garlic Cloves – Minced
2 Eggs – Lightly Beaten
1 Tablespoon Olive Oil (or Canola Oil)
1/2 Small Red Bell Pepper – Diced
Salt and Pepper to taste
Ground Cumin to taste
Directions
- Blanch the green beans (immerse in slightly salted boiling water for about 1 minute and immediately place in iced water to stop the cooking process). Drain and reserve.
- In a large skillet, heat the oil and soften the onions until translucent.
- Add garlic and red pepper.
- Add green beans and eggs.
- Season with pinch of salt and pepper to taste.
- Continue to cook until eggs are fully cooked and green beans are heated through.
- Serve over rice.
